So...my friend Jenn informed me that she would like me to stop posting recipes on here because she gets too hungry. So I'm sorry. But prepare to have you mouth start watering. One day I'll get around to posting about crafts and such, but first I have to find the time to actually be crafty. Cooking on the other hand is done everyday. Aside to many diaper changes, bottles being made and playing with babies, it's what I do lately. But Jenn, lets go for a 'drive' and have a break from mommyland ASAP and I'll bring you some of these scrumptious Oreo-Stuffed Chocolate Chip Cookies! (I have a ton...)
I got this recipe from my sweet friend Sarah and finally got around to trying them. And man I'm glad I did. They are so yummy!
Here's what you'll need:
2 sticks softened butter
3/4 cup packed light brown sugar
1 cup granulated sugar
2 large eggs
1 tablespoon vanilla
3 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
10 oz bag chocolate chips
1 pkg. Oreo cookies
Preheat oven to 350 degrees.
Cream butter and sugars together with a mixer until well combined. Beat in eggs and vanilla.
In a separate bowl mix the flour, salt and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined.
Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie. Take another scoop of dough and place on bottom of Oreo cookie.
Seal edges together by pressing and cupping in hand until Oreo cookie is enclosed with dough.
I enlisted my sweet husband to help with the messy part:
Place onto a parchment or silpat lined baking sheet and bake cookies 9-13 minutes or until golden brown. Let cool for 5 minutes before transferring to cooling rack.

On the first batch I think we used a little too much cookie dough. They were gigantic! For the rest of the batches we reduced the amount of dough and they turned out much more proportionate to the Oreo. Ha.
These cookies are seriously amazing! Baking the Oreo inside makes the Oreo super soft and the whole thing just melts in your mouth.

Don't stop posting recipes, I love them and this week I am going to try the capt'n crunch french toast and the Meat Loaf. The oreo's look amazing, but I am cutting out sweets. So just keep me updated on how good they are. Maybe I will break down and make them, eat one then give the rest to neighbors...lol. Thanks for all the yummy recipes. =)

ReplyDeleteOk, not really. You know I can't resist a good cookie (and my squishy stomach proves it -- no losing baby weight for this girl).
As soon as I get paid on Friday I'm heading out (or going online) and purchasing a doorway jumper for Gaius. That kid is crazy for standing/jumping.
And yes... we do indeed need to go for a drive. Sorry I missed your text last night!
I'm thinking we need to ditch the kiddos with the men at one house and craft for a couple of hours at the other -- a mini escape from all encompassing Momville.
That recipe is much better than i have. I would like to try it as soon as possible. Thanks for sharing with all of us...
