I was mentioning to my Mom about posting recipes that used cereal and she told me to make a meatloaf with Cornflakes. Well I've never made meatloaf in my life. And I've never been a huge fan of meatloaf. But I decided I was up for the task.
My sweet friend Brittany brought me dinner one night after having Chloe and she brought meatloaf. It was super delicious. She used BBQ sauce instead of ketchup, and I loved it so I knew I wanted to do that with mine. I made it on a whim last night and I thought it turned out great. So did Scotty. And Jaxon loved it. It was the perfect consistancy for his new found molars. That being said I think that this recipe is a keeper.
Now like I said I've never made meatloaf and so I'm not sure what you're really supposed to be in a meatloaf, but here's what I put in mine:
1 lb ground beef
3 cups cornflakes
1 large onion finely chopped
1 large green pepper, seeded and chopped
1 can hunts tomato paste
1/4 cup water
1/2 cup BBQ sauce (plus more for the top)
1/3 packet Ranch seasoning
1 tsp garlic powder
2 eggs
First preheat the over to 350 degrees. Then crush the cornflakes. Either in a ziplock with a rolling pin, or in a food processor.
In a seperate bowl mix the tomato paste, water and BBQ sauce and set aside.
Chop the onion and green pepper. Mix in the ground beef, eggs, ranch seasoning, and garlic powder.
Then mix in the sauce mixture and the cornflakes in with everything else. Once all mixed, form into a loaf into your pan.
Then spread some BBQ sauce over the top of the meatloaf.
I baked mine for 1 hr and 20 min. However I feel that my oven takes longer to cook than most recipes call for, so I would check yours after an hour to be sure.
I served ours with fried potatoes and it was delicious. It was very moist and have great flavor. If you like yours more on the dryer side add more cornflakes and less water.
