Cap'N Crunch French Toast

This is a delicious way to use Cap'N Crunch Cereal. Scotty LOVES Cap'N Crunch, so when I surprised him with this for breakfast yesterday I totally scored major points. Here's what you'll need:

3 Cups of Cap'N Crunch Cereal
8 pieces of bread (I used a Cinnamon burst loaf from the bakery, but plain ol white bread would work just great.)
4 eggs
3 tsp cinnamon
2 tbsp sugar
1/4 cup cream
1/4 cup milk

Crush the cereal into a cornmeal consistancy. I used a food processor. 
Pour the cereal into a bowl or a dish whide enough to fit the pieces of bread. 

Mix the eggs, cream, milk, cinnamon, and sugar together and place that mixture in a like container. 

Soak the bread in the egg mixture on both sides. Allowing the excess to drip off. Then move to the cereal pushing firmly so that the whole piece is coated with cereal. Do this on both sides of the bread.  
Place the coated pieces of bread on a greased skillet or pan over medium heat. Allow to cook until the cereal is slightly carmelized. This takes about 3-4 minutes on each side.

As mine were frying I made some whipped cream. (Homemade whipped cream is seriously delicious!) Here's what you'll need:
2 cups of whipping cream
1 cup sugar
2 tsp vanilla

Combine all the ingredients  in a stand alone mixer. Mix on high until mixture is firm and peaks form. (

Top the french toast with a couple spoonfuls of whipped cream. (And syrup if you like) and wallah: instant awesome wife points.

If you have another type of cereal that you like I'm sure it would work just fine to substitute out the Cap'N Crunch. But in our house we've only tried it with Cap'N Crunch. Also if you don't have cream, add more milk and forget about the whipped cream. Just serve with syrup. Enjoy!
