Diet? What's that?

Non existant around here thats for sure. Again this is a delightful recipe from Confessions of a Cookbook Queen. I made these for Valentines Day and then again for my Book Club later that same week. I topped mine with a chocolate covered strawberry to make the perfect Valentines Day treat.

Here's what you'll need:
Box of family size brownie mix, plus ingredients to make them according to cake-like brownie directions (this usually just requires the addition of an extra egg)
1 bag (8.6 oz) Hershey Bliss White Chocolate Meltaways
1 stick salted butter, at room temperature
2 cups powdered sugar
1/4 cup heavy whipping cream

Preheat oven to 350 and line 17 muffin cups with cupcake liners.

Make brownie mix according to directions for cake-like brownies and fill prepared muffin cups 1/3 full. You should get about 15-18 brownies. 

Unwrap Hershey candies and gently push one into each brownie until it is level with the batter.
Bake 20 minutes or so, until brownies bounce back when lightly touched.

Remove from oven and allow to cool on a wire rack. While cooling, prepare frosting.

 I bought extra Bliss chocolates and melted them down to top off the strawberries.


In a microwave safe bowl, microwave remaining Hershey candies (you should have at least 12) for about a minute, stopping to stir every 10 seconds until completely melted. Allow to cool to room temperature.


In the bowl of an electric mixer, beat butter and cream on medium low speed until smooth. Add powdered sugar and beat on medium until smooth. Add cooled white chocolate and beat on medium-high until light and fluffy.

Frost cooled cupcakes.
