I've had a number of people ask for this recipe, and I've been a slacker at getting it to them. So I figured I would post it here. Warning: It is really simple. And it is really delicious!
Ingredients:
2 (12.5 oz) cans of Chicken. I like Costco's Kirkland Signature myself, but any will do
2 cans of petite cut tomatos
1 can of corn
1 can of Pinto Beans drained and rinsed
1 can of Black Beans drained and rinsed
1 can of Green Chilies
1-2 cups of your favorite Salsa depending on taste
1/2 - 1 packet of Taco Seasoning depending on taste
1 packet of Hidden Valley Ranch Dip mix
1/2 of one Onion chopped optional
Sour cream, shredded cheese and tortilla chips to garnish
Note: My husband hates chunks of tomatoes so I purree them before adding them to the Chili. He also really likes onions, so I add the chopped onion for him sometimes. He prefers it with the onion and I'm still undecided. I think it's just as good without.
I make this in a Crock Pot. (One of the best inventions ever!)
Start by chopping the onion (if you are using one).
Add it to the crock pot with the chicken and the green chilies. You can also make this with fresh chicken breast. When I do this, I cook the chicken, green chilies and onion on low for 4 hours or until the chicken is fully cooked. Then shred the chicken and add the rest of the ingredients.
Drain and rinse the beans and add everything into the crock pot.
Allow to cook for 3-4 hours on low.
I like to top mine with sour cream, a little cheese and crushed tortilla chips. Serve with Cornbread for best results :) I like to break up my cornbread and put it right in the chili. It is most delicious this way.
